I use all my knives, even though I paid collector prices for that GEC Tom's Choice. All the non stainless knives end up with patina from food prep, or cutting citrus for drinks.
stained carbon steel is a mark off honor among the community. I have a Douk-Douk carbon Squirrel I use to cut fruit and my sandwich at lunchtime, and a Qeen Workhorse congress in carbon (get one). both are oxidized a deep gray w/faint colors.
